    A 240mm MagnaCut gyuto

     

    This 240mm MagnaCut gyuto features thicker than typical blade-stock with a fully convex bevels that serve to optimize cutting performance. Weight-wise I would categorize this knife as a midweight. The handle consists of buffed desert ironwood. The choil and spine are nicely rounded and polished to 600 grit.

    Handle: Desert Ironwood buffed and waxed

    Grind: full convex 50/50

    A 240mm A2 Gyuto Chef Knife

    This 240mm A2 Gyuto Chef Knife utilizes a profile which is a variation on my Sabatier styled pattern with a a slightly lower tip, and a slightly longer flat. It’s also a bit heavier than is typical for me owing to a bit less distal taper than I usually grind. Nail flexing, full convex and hand finished in (seemingly) everyone’s favourite semi stainless. This knife should be a delight.
